Building from Success

In 2018, we launched our inaugural food truck venture, Chenza's Cruzin Cuisine, which swiftly gained popularity and became a beloved fixture in the Long Island community. Our success was evident through our appearances on esteemed radio stations, frequent participation in festivals and events throughout the island, and our provision of exceptional catering services for a wide range of special occasions, including birthdays and weddings.

Unfortunately, the unprecedented challenges posed by the pandemic in 2020 compelled us to divest our food truck enterprise. However, undeterred by the circumstances, we embarked on a deliberate search for a permanent location to establish a brick and mortar establishment. In March of 2023, we enthusiastically secured a lease in the charming town of Mattituck, where we unveiled Chenza's Twisted Tacos.

This new venture not only presents a novel and delectable assortment of tacos from various culinary traditions but also offers an array of tantalizing options, such as burritos, quesadillas, empanadas, desserts, and an enticing selection of starters, including loaded nachos, fries, sweet plantains, stuffed jalapeños, and our signature yuca balls, brimming with cheesy goodness.

In April of 2024, we decided to reimagine and rebrand our remarkable taco concept as The Taco 105. The name "The 105" holds profound sentimental value, as it serves as a commemoration of our initial foray into the culinary world. As The Taco 105 continues to flourish and evolve, one aspect remains unwavering: our unwavering commitment to delivering exceptional cuisine characterized by its superior quality, freshness, and irresistible appeal.

Husband, Daniel Wajdik III - As an executive chef with over a decade of experience, a private chef in the Hamptons, valedictorian of my culinary class and owner and operator of my own successful food truck business, food is my passion. Wife, Shirley Wajdik - As a business woman with a clothing line in Peru, a house manager in the Hamptons, and also trained in culinary School, food is also my passion which makes this collaboration better myself and my husband a recipe for success!

So with both of us having culinary training as well and a love for food our vision for The Taco 105 is to create a symphony of culinary diversity, melding tacos inspired by cuisine from cultures all around the world and creating a vibrant menu of unique tacos that offer a little something for everyone. Everyone loves tacos. They’re fun and delicious, and they bring people together. With a little spark of creativity and a delicious twist on a classic staple, The Taco 105 will be sure to delight.
