One Idea. A World of Flavor.

The Taco 105 began with a simple belief: tacos could be more than the same familiar choices. We wanted to create a restaurant that felt different — one that brought together the flavors, inspiration, and excitement of places around the world.

The Taco 105 is a family-run restaurant led by Daniel and Shirley Wajdik. Shirley's Peruvian heritage, along with Daniel's nearly two decades of experience as an executive chef, helped shape the bold flavors, global inspiration, and creative vision behind The Taco 105.

Many of our ideas were shaped by travel and by the foods that stayed with us long after the trip ended. We began imagining how those flavors could live inside a taco: a Peruvian lomo saltado taco, Korean-inspired combinations with kimchi, Jamaican jerk chicken, Hawaiian pulled pork with grilled pineapple, a New Orleans oyster po'boy, a New England lobster taco, Chinese-inspired duck on a bao-style bun, and many more.

That vision became The Taco 105: a place where guests can explore different cultures and flavor traditions one taco at a time. We are creating our own lane with globally inspired tacos made with care, creativity, and respect for the flavors that inspire them.

But a memorable restaurant is about more than the food. From the beginning, we have believed that food quality and customer service belong side by side. Every plate matters. Every guest matters. We want people to feel welcomed, excited, and eager to return.

We are proud to call Mattituck home and to be part of Long Island's North Fork. We value fresh ingredients and local relationships, including farms and fish markets that help connect our menu to the place where we serve it. We are especially grateful for the local customers and seasonal visitors who return again and again — sometimes several times before the summer ends.

Our dream reaches beyond one restaurant. We want more people, in more communities, to experience The Taco 105. As we grow, we intend to protect what made the original special: adventurous flavor, high standards, genuine hospitality, and the belief that every taco can tell a story.
